Having riden motorcycles for years, engine braking (selecting a lower gear for better control over the bike) is something that is absolutely compulsory. Making the switch to cars, about 5-6 years ago, I found myself doing the same thing with my automatic W126s. By habit, I never put the car in drive when I'm starting my journey, I naturally start with the shifter in position 3, resulting in the usual 2nd gear take off, but limiting the car to 3rd gear.
